Food Technologist and Unit Leader Margaret Taylor brings to the Biotechnology Unit expertise in food technology, a deep concern about food safety, and an unflagging commitment to expand and improve the technological support and training the Biotechnology Unit provides the local and regional food industry.
With a BSc (Hons) in Natural Sciences, an MSc in Food Technology from UWI and certificates for HACCP, Advanced Food Microbiology and Internal Quality Auditing, Taylor has provided consultant services and technical assistance to many small and large entrepreneurs in the food industry.
In the area of product development, she has helped create sauces, fruit-based beverages, mango products and breading and batter mixes. She has also planned and conducted workshops for the production of tropical fruit wines, fried snacks and the processing of pickles, sauces, mangoes, meat and non-alcoholic beverages. In addition, she has audited and developed quality management systems for food companies throughout the region.
